
I’m always on the lookout for quick and easy Paleo recipes. Who isn’t? But lately it’s been of paramount importance to me. I’ve been a really busy bee and haven’t really wanted to spend hours making shopping lists, shopping and cooking sophisticated meals.
One evening, I opened my fridge, took stock of what I had, and decided to improvise a bit. I was so happy with the end result that I decided to share it with all of you!
As drumsticks are generally cheaper than chicken thighs or any other meat, this is a great meal if you are on a budget. If you find them on a special deal, even better! It’s also so easy to prepare that even a total beginner can prepare it and show off their cooking skills to the whole world.
All the colours of different vegetables make the dish really appealing to the eye. It looks very autumn-winter appropriate as well! And feel free to swap the vegetables for anything else, e.g. pumpkin is in season and could be a wonderful addition.

Preparation time: 20-30 mins (depending on your chopping speed)
Total cooking time: 1 hr 20 mins
Easy Paleo Chicken Drumsticks
Ingredients:
8 chicken drumsticks
1 red bell pepper, chopped
1 large courgette (approx. 1kg),
chopped into cubes
2 medium onions, divided
into 8 pieces each
6 cloves of garlic, halved
3 tbsp of olive oil
1 tsp of dried tarragon
1/2 tsp of dried parsley
1/2 tsp dried oregano
or 2 tsp of Italian Herbs
2tsp of salt
1 tsp of freshly ground
pepper
1. Pre-heat the oven to 220°C (425°F).
2. Put all ingredients in a large bowl and mix well to coat with oil and herbs.
3. Spread all the ingredients on a large baking tray.
4. Roast for 50 minutes, turning the chicken halfway.
Voila! Your mouth-watering masterpiece is ready!
It is wonderful served with fresh green leaf salad, some fresh tomatoes or alone.
