What I Ate Today #18 (Accidental Success in the Kitchen!)

Haven’t filmed one of these What I Ate Today videos for a while, so here’s a new one! I’m eating my porridge in a different way these days and I love it. Also, I improvised a creamy mushroom pasta recipe for lunch and it turned out amazing.

The morning workout was only 10 minutes but it worked out my whole body. I’ve been really enjoying my short but intense daily workouts.

As always, what I’d like to promote with my food diary videos is intuitive eating, a fully varied diet, no diet restrictions, and lots of real, whole foods. I really hope you enjoy watching it!

For my morning porridge, I mixed 2 parts of rolled oats, 1 part of spelt flakes, and 1 part of barley flakes. I also added a few tablespoons of coconut milk for creaminess and around a cup of water. Plus a handful of raisins. And of course a little bit of salt. Try it, it’s delicious.

Here’s what I used for the mushroom and leek pasta:

  • a medium onion
  • a small leek
  • around 4 slices of chorizo (mine was all natural from a farmer’s market)
  • around 450g (1 pound) of mushrooms
  • a bit of double cream (probably around 1/3 cup)
  • 200g of pasta
  • a bit of parmesan cheese for grating

That’s it! It honestly took me less than 30 minutes to make and it was AMAZING!
