My husband is obsessed with pesto sauce. We buy a huge bag of fresh basil from the farmer’s market every single weekend and then make a couple of jars of homemade pesto sauce to go for the whole week. We usually just spread some on rice and chestnut crackers topped with fresh goat cheese, and it’s delicious eaten like that! We also like dipping baked potato wedges in it.
Recently, I’ve started adding it to my homemade salad dressing and it tastes amazing. So here’s exactly how I make my homemade pesto salad dressing in literally just one minute.
Ingredients for the Homemade Pesto Salad Dressing:
- 6 tbsp plain yogurt (I always use goat yogurt)
- 2 tbsp extra virgin olive oil
- 1 tbsp. pesto sauce (if you want to make it at home, you can follow this simple recipe)
- salt and pepper
Makes enough dressing for 2 people.
Mix it all together and that’s it! It’s just something a little different to try if you normally just use oil and vinegar or oil and lemon juice. We both love it.
