4 Easy and Healthy Easter Recipes

These four recipes are exactly the type of food I like eating in spring when the weather is warmer and I crave something fresh and light. I’ve even included a little, super easy dessert recipe for you! It’s literally spring in a glass.

The very special spring celebration of Easter is round the corner, and this year I decided to make it extra special despite the fact that we’re still without electricity. Christmas was ruined, I won’t let Easter be ruined, too!

When I started to think what kind of recipes I’d like to see on my Easter table, I immediately gravitated to fresh salads, fresh veggies and fruit, and deliciously zingy desserts. These four recipes fit the bill perfectly. Enjoy!

The Freshest Tabbouleh

Ingredients:

  • 1 cup organic bulgur (either wheat or spelt – I used spelt in the video)
  • 3 spring onions
  • 2 cups fresh parsley
  • 1 cup fresh mint
  • 1 lb. tomatoes
  • 4 tbsp. lemon juice
  • 4 tbsp. extra virgin olive oil
  • salt and pepper

Mix bulgur with 2 cups of water and boil for 15 minutes. Chop onions, herbs, and tomatoes finely. Put all the ingredients in a bowl, add lemon juice, olive oil, and seasoning. You’re done! Super easy, right? I told you!

This salad recipe is the symbol of spring for me. Don’t believe me? Try it for yourself! 🙂

Parsley and mint are amazing for your health. They’re chock full of calcium, vitamin C, and iron, plus lots of antioxidants. It truly is a salad for beautiful, clear skin.

Eggs with Avocado Stuffing

  • 3 hard-boiled eggs
  • 1/2 medium avocado
  • 1/2 medium tomato
  • 1 tbsp. olive oil
  • salt and pepper
  • a pinch of dry oregano (optional)

As it’s Easter, I couldn’t not include a recipe with eggs. This one is one of our favourites for breakfast or light lunch. It’s such a versatile and quick recipe.

All you need to do is chop the tomatoes, add the avocado, olive oil and seasoning. Cut the eggs in half, spoon the yolks out, add them to the rest of the ingredients. Stuff the eggs with the mixture, and voila!

A Salad with a Twist

  • 2 oz. arugula
  • 1/2 lb. beetroot
  • 2 medium oranges
  • 2 tbsp. lemon juice
  • 2 tsp. honey
  • 1 tsp. mustard powder (optional)
  • 3 tbsp. extra virgin olive oil
  • salt and pepper

Start by layering arugula, then cubed beetroot, and finally peeled and cubed oranges. Mix all the ingredients for the dressing and pour over the salad.

I love the contrast of the different colours in this salad and the unexpected marriage of tastes.

Pistacchio and Clementine Parfait

  • 1.5 cups unsweetened yogurt
  • 1/3 tsp. vanilla powder
  • 2 tbsp. raw honey
  • 3 clementines
  • 4 tbsp. toasted, unsalted pistachio nuts

Start by peeling the clementine and separating into pieces. Start layering the dessert by placing some yogurt at the bottom of a little glass (around 1/4 of the glass). Top with 1/2 tbsp. honey and 5 clementine slices, sprinkle with 1 tbsp. of pistachios. Then repeat: add another 1/4 of yogurt, honey, clementines, and finally top with pistachios.

Put it the fridge for a few hours before serving – all the tastes will blend and it will be heavenly!

  1. These are so yummy! Tabbouleh also happens to be one of my favorite meals ever. I eat it all year round. I can’t wait to make the pistacchio and clementine parfait! It looks delicious and once in a while I need some dairy in my life 😀 I also include oranges in my salads, but I’m the only one at home who thinks this is delicious :s

      • That’s the best compliment I would ever get, too… Three and a half months ago I got a surgery on my vocal cords (I’m an actress so I didn’t have any other option, I had to remove my devilish edemas…) so I’m crazy obsessed (always have been) about voice hahaha I’m the weird girl who notices a beautiful voice when others notice the nice hair or gorgeous eyes first hahaha 😀 I love beautiful voices, specially the relaxing ones like yours!
